The other day I was sitting around with some friends and one of them said he had been loosing weight by watching his carbs.  Another said you know there are no good carbs or bad carbs they are all carbs. To which another friend protested and said there is a difference. The conversation got me to thinking how could I have responded because there are good carbs and bad carbs. There are so many fad diets that say don’t eat carbs at all, others that say you need carbs to be healthy.  How is someone to know what to eat and what not to eat. After thinking about the conversation I realized that the difference between a good carb and a bad carb is by the company it keeps.

Recipe: Grains in a Thermos bottle

3/4 cup of grain (refer to this chart)

1 1/2 cup boiling water

1 Tablespoon coconut oil


Put the grain in a wide mouth stainless steel Thermos® bottle. Add the boiling water , tighten lid and let sit for 12-18 hours.  Remove grain and fluff add the coconut oil and mix together. You may want to add some spices if you like.  We like salt and pepper, or taco seasoning

WHY A CLEANSE?

With the start of a new year many people make goals or resolutions. As we all know the most common ones are to get healthy, lose weight or get in shape. One way to get a good start with goals like these are to do a cleanse. Our body is bombarded daily with toxins, whether in the air we breath, things touching our skin, even in the foods we eat.

There are two cleanses we suggest to do often, the Liver Cleanse and the Kidney Cleanse. Both of these cleanses can be found here.

By doing a cleanse you clear out your body of harmful toxins and give your body a fresh start. Many people say that following a cleanse they feel rejuvenated and healthier.

Liver Cleanse: The liver is the bodies waste recycling plant. If there are toxins the liver sorts them out and gets rid of them. If the body is subjected to many toxins (and we all are) the liver becomes overworked and has a hard time keeping up. By cleansing the liver you give your liver a chance to clear out toxins so that it can begin doing its job again.

Kidney Cleanse: The kidneys wash toxins out of our blood and then expels the toxins in our urine. If we are not getting enough water and too much of other liquids then the kidneys don't have what they need to clean up the blood. A kidney cleanse will wash out the kidneys of the toxin buildup and help get rid of painful kidney stones. Remember after a kidney cleanse to increase your water intake. We suggest 1 quart of alkalinized* water for every 40 pounds of body weight.

*To make alkalinized water add 1 teaspoon of baking soda to one gallon of water, if the taste is too much then replace baking soda with fresh lemon juice

Monia is very helpful in the strengthening, building up and toning the lungs. We use it for any lung related issues like Flu, cough, bronchitis, etc.

 

Here are the ingredients of Monia and what they are used for:Pleurisy Root and Comfrey Root have been used for pleurisy, lung troubles, bronchitis, asthma and cough. Horehound has been helpful for congestion, hoarseness and coughs. Cayenne has been used to speed up the circulation and action of the other herbs.

COUGH SYRUP


Bring to a boil:
3 cups purified water (must not have chlorine)
Add herb mixture*: 
Horehound……………1 ounce
Wild Cherry Bark……1 ounce
Anise seed……………….1 ounce
Elecampane Root…….1/2 ounce
Lobelia Herb………….1/4 ounce
Lower heat. Simmer for 15 minutes and strain out herbs. This should be about one pint to this add :
1 1/3 cups honey (1lb)
1 ½ cups of Red Raspberry Vinegar

This cough syrup can be used for all ages and is good for asthma, bronchitis, colds, etc. Keeps well, not necessary to refrigerate but helps with the flavor.

WHAT TO DO FOR THE FLU

As the darker, colder days of winter are upon us; our immune systems can be weakened. With weakened immune systems we are vulnerable to many different viruses and bacterias that can make us sick. Here are some things you can do prevent the flu or to make it easier if you get the flu.

 

Fection: is the first line of defense against the flu. Many school teachers take one Fection capsule a day and rarely get sick. If you happen to get the flu fection can make it so you will not get it so bad and will overcome it much faster.

 

Vitamin D: with the shorter days of winter our bodies don't get as much sunshine and thus our vitamin D is low in our bodies. A good vitamin D will go a long way in keeping you healthy. If you do get the flu a mega dose of vitamin D ( 1,000 iu per pound of body weight two days in a row) will give your body the ability to get over the flu quickly.

 

Water: as it begins to get colder our bodies uses up the water in the body to maintain its temperature. Remember to drink one quart of alkalinized water for every forty pounds of body weight. If you are dehydrated your immune system will not be strong enough to combat anything that is attacking it.

 

Coconut oil: is an amazing anti-fungal, anti-bacterial food. People who get 3 tablespoons of coconut oil a day are less likely to come down with the latest "bug" going around.

 

Slippery Elm Drink: (see below) this is a helpful to drink when you can't keep any food down, or your lungs hurt from the flu. Some people say it tastes like egg nog.

 

Hopefully these few tips will help you be healthier and happier this holiday season.



SPOTLIGHT ON: FECTION


FECTION is very helpful in the strengthening of their immune system, without an adverse effect upon the digestive tract, or by increasing yeast infections.

 

Here are the ingredients of Fection and what they are used for:
Golden Seal Root and Oregon Grape Root are pro-biotics that influence the glandular and lymphatic systems, and the skin. They also stimulate saliva and bile secretions. Echinacea Root and Astraglias are fungicides and are pro-biotic. They cleanse the lymphatic system and purify the blood. Burdock Root cleanses the lymphatic system and helps build strong tissue. Boil: 
2 cups milk (can be nut milk, etc) 
pour into a blender and add

1 teaspoon honey

pinch of cinnamon or nutmeg

1 rounded teaspoon slippery elm powder

1 raw egg*

Cover and blend well. Is best drank warm.

*because the "milk" is boiling the egg gets cooked in the blender.

We had a woman in the clinic the other day. She had come to see Dr. James for other problems. Dr. James did dry blood analysis and noticed that she was suffering from arthritis. INSTANT HOT COCO MIX

1 1/2 cup raw unrefined sugar

4 Cups dry milk powder
3/4 cup unsweetened cocoa (or carob)
1/8 tsp salt

This works best in a VitaMix or similar high power blender but you can also do this in a normal blender. Add the sugar to your blender first and run on high for three minutes. This will make the sugar like powder sugar and give you fewer lumps in your hot coco. Add the rest of the ingredients and blend on medium until well mixed.

WHY YOU SHOULD NOT EAT EXCITOTOXINS

First let me explain what excitotoxins are: excitotoxins are substances in food (see this list). When consumed in "large" amounts (more than 12 µg or 0.0000004 ounces in a day) cause the neurotransmitters in the brain to become overactive, and eventually kill the brain cells.

  • What exactly does this mean? If any of the substances in the list are listed on the box of food products you are eating you are getting too much! That is because if it is on the list of ingredients there more than enough to create toxicity.
  • What are some of the problems of getting too much excitotoxins? neurological disorders, including migraines, seizures, infections, abnormal neural development, certain endocrine disorders, specific types of obesity, and especially the neurodegenerative diseases; Parkinson's disease, Alzheimer's disease, Huntington's disease, and olivopontocerebellar degeneration.

Pretty scary list of degenerative diseases isn't it. Yet on average we eat almost 2 pounds of excitotoxins each year. That works out to 2 billion times what our bodies need. It is a bit much isn't it! So what can you do about it? Start by avoiding any foods that have excitotoxins in them. Eat foods not food products. If it came straight from the field it is safe if it came from a factory read your labels (See this list for common names). If there are excitotoxins on the label don't eat it!

One thing to remember about excitotoxins is that they are very addictive. So if you stop eating excitotoxins your body will revolt. You will feel withdrawal symptoms, crankiness, fatigue, maybe even headaches and nausea. Taking Detoxalation will lessen the withdrawal symptoms and speed the cleansing of the excitotoxins. You may find yourself craving foods that have excitotoxins in them. That is your body telling you it wants to be feed those excitotoxins don't give in, you will feel much better.

PEAR BUTTER


We just made this at our house and it is so delicious. I just had to share the recipe with you.

Contrary to the name there is no butter or milk in this recipe. In fact the only ingredient is pears and time. You can add spices if you wish such as nutmeg, ginger, lemon peel, anise. But we found that the pear butter is great with pears alone.

Ingredients

  • 10 to 15 medium pears


Wash the pears (peel if you want to but not necessary) and slice into wedges. Place in a saucepan (or slow cooker). If there is no juice from the pears add 2-3 tablespoons of water just enough to cover the bottom of the pan to prevent burning. Cover and cook on low heat until the pears are soft about 30-45 minutes. place softened pears in a blender and blend until you have a soft consistency. Return pears to pan and cook on low for 8-12 hours until the pears reduce to half and the pears have a butter like consistency.

You can then put in jars and keep in the refrigerator for up to a month. Or if you prefer add your pear butter to sterilized canning jars and can the pear butter and then you can store it for six months in a cool dry place. Makes about 6 pints.

THE OIL AND WATER DIFFERENCE

I must apologize for this newsletter being a few days late. As you can see from the picture it is late because of the birth of my daughter Alyxibeth. She was born on Sunday September 4th. The reason I want to share her birth with you is the difference that her mother is feeling. Between our last child and this child my wife had changed her diet. She changed all of her oil intake to coconut oil. She said that the change in oil drastically changed how she felt throughout her pregnancy! She had much more energy and felt much stronger. Another change she made was to begin drinking alkalinized water. You add 1 teaspoon of baking soda or the juice of half a lemon to a gallon of water. She attributes this change in water to her feeling better and having a better pregnancy.

The baby is very healthy, in fact this is Dr. James' second grandchild whose mother used a rebounder throughout her pregnancy. Both grandchildren could lift their heads and look around the day they were born! Dr. James says that the health of the children is a direct result of their mothers using a rebounder throughout pregnancy. 


SPOTLIGHT ON: NEMIA


NEMIA

is a wonderful formula for thyroid problems. If you are lacking in energy, patience, health, sleep or joy, most people don’t even think of thyroid problems. One of the thyroid’s functions is to kill off or weaken bacteria, germs and viruses that are in the blood stream. One of the first things we tell people to add to their diet is whole grains. This chart shows how to prepare whole grains:

Per 1 cup of dry Add water Cover & simmer about
Barley 2-1/2 cups 60 minutes
Millet 3-12 cups 30 minutes
Oat flakes 3 cups 30 minutes
Rice, short grain 2-1/2 cups 50 minutes
Rice, medium grain 2 cups 50 minutes
Rice, long grain 1-1/2 cups 45 minutes
Rice, flaked 2 cups 20 minutes
Rye 2-1/2 cups 60 minutes
Rye flaked 2 cups 20 minutes
Wheat 2-1/2 cups 60 minutes
Wheat flaked 2 cups 20 minutes
Wheat cracked 3 cups 20 minutes
Chick-peas (soak over night) 4 cups 2 - 3 hours
Lentils 3 cups 1 hour
Pinto beans 3 cups 2 - 3 hours
Soybeans (soak over night) 4 cups 3 - 4 hours
Soybeans, flaked 2 cups 1 - 2 hours
Split peas 3 cups 45 minutes


Note --- The above approximations, which will vary with altitude and several other factors, are for cooking up all the free water. For soups, more water and longer simmering times are required. The more people who drop in unexpectedly, the more water. Excess water should never be poured off, as it contains vitamins and minerals from the food cooked in it. If there is an excess, you might save it for soup stock.

A woman contacted us concerning her daughter. Her daughter is what they call morbidly obese, her female organs are begining to shut down, her pancress can't process insulin putting her on track for diabeties. TACO SEASONING

Many people will tell you that making your own seasoning mixes will save you lots of money. Another big reason to make your own seasonings is that most if not all store bought mixes have MSG and/or excitotoxins. Excitotoxins damage and kill nerve cells, weakens the endocrinde system, and causes weight gain. Why would you want to add that to all of your food?

We love this taco seasoning, we can never keep enough of it around. We use it for just about everything, taco rice, vegetarian chili, anything that needs a little kick.

Ingredients
2 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1 teaspoon dried oregano
1/2 teaspoon paprika
1 teaspoons ground cumin
1 tablespoon sea salt
1 teaspoon black pepper

Preparation
Add all the ingredients to a jar and shake to combine. That is all that there is to it.

Notes:

  • If you don't like your food too spicy decrease the chili powder and crushed red pepper.
  • About salt: Sea salt will streach your spices, it is a flavor enhancer by having the sea salt in the mix you will need less of the mix in your food.

CAN I TAKE MORE THAN ONE FORMULA?

Recently I was asked this question the person asking was taking Hay Aszfor allergies, Bladneyfor kidney troubles and Tonic F. She was coming down with the flu and was afraid add one more herbal formula to what she was taking already. This is what I told her:

 "As for taking too many herbs you can't over do it. By taking more herbs it is like having a bigger salad with different types of lettuce on it.

Herbs nourish the body and help it heal whereas over the counter drugs try to replace what you body is missing. So with drugs you can over do it because you are adding too much and then your body can't do anything with the excess that you have taken. Whereas with herbal formulas you are giving your body building blocks and your body can make exactly what you need."

SPOTLIGHT ON: TRAVL


Travl is one of my best formulas but not many people know about it.

TRAVL got its name not only because we use it for the discomforts of motion sickness, but also because it is wonderful for alleviating menstrual cramps. It’s not going to solve the problem of menstrual cramps.  It will get rid of them until another formula begins to tone up the female organ regions, so that the females don’t have such a terrible time.

TRAVL can also be used as a catalyst.  Let’s say, for instance, that you are taking an herbal formula and you want it to work a little bit faster, or a little better; take one capsule of TRAVL with the formula.  One is sufficient as a catalyst.  If you are taking a handful of herbs, add some TRAVL.  It increases the absorption, and gets the herbs into the system much faster.

This formula is also used for external bleeding, circulation, dizziness and hot flashes.  TRAVL helps increase the body’s tolerance to heat.  It’s also used for high and low blood pressure, nosebleeds, and for treatment of shock.

AVOID EXCITOTOXINS!


Excitotoxins are food additives and other chemicals that cause Excitotoxicity.

Excitotoxicityis the process by which nerve cells are damaged and killed by glutamate and similar substances. Excitotoxicity may be involved in spinal cord injury, stroke, traumatic brain injury and neurodegenerative diseases of the central nervous system (CNS) such as multiple sclerosis, Alzheimer's disease, amyotrophic lateral sclerosis (ALS), Parkinson's disease, alcoholism or alcohol withdrawal and Huntington's disease.

Check out this page on Excitotoxins on my website. It will give you a good idea of what additives to avoid.

WHITE SAUCE


In working to help people get away from excitotoxins this is one of the first recipes we teach them. You can use this to make wonderful soups and sauces. It is a great subsutitue for Cream of Mushroom soup that is called for in many recipes.

Traditional uses: making creamed meats or vegetables, gravies, scalloped dishes, or other sauces where a medium sauce is desired. It has the thickness of heavy cream.

Ingredients
1 cup Milk
2 tablespoons * Unbleached Flour or
2 teaspoons **Arrowroot or cornstarch
2 tablespoons Fat (butter, coconut oil, etc.)
1/2 teaspoons Salt
a little Pepper

Preparation
Option 1:Melt fat in sauce pan, add flour, stir to smooth paste. Cook for 5 minutes on low. Add milk slowly and stir constantly until it begins to thicken. Add seasoning.

Option 2:Make a paste with flour and fat in a cup. Have milk heating in a sauce pan. Add the hot milk to the paste slowly, stirring constantly. Put the mixture into the sauce pan and cook until thickened. Add seasoning.

Option 3:In blender or bowl mix the flour with cold water until smooth. Add hot milk slowly, then fat. Cook all together in the sauce pan until smooth and thickened. Add seasoning. Note: Remove from heat when bubbling. If sauce cooks too long it becomes too thick and the butter seperates out. To repair: add more milk and cook quickly, stirring constantly, until sauce bubbles again.

*Take your time cooking flour so you don't have a raw taste. Cook slowly so as not to brown or cause to separate.

** Arrowroot and cornstarch require longer cooking than flour. A quickly cooked arrowroot or cornstarch mixture always has a raw taste. White sauce is made with some kind of milk or white stock, thickened with flour, arrowroot or cornstarch, some kind of fat and seasoned.

Here in New Mexico the weather has created an explosive mix for wildfires. There are fires buring all around us. The smoke has caused a haze in the air. Along with this haze there are many health issues from the smoke exposure. It can cause a scratchy throat, runny nose, sneazing, itchy eyes and headaches. If you are exposed to the smoke or haze and start to feel these symptoms coming on there is something you can do. Hay Aszwill help with all the irration and strengthen the membranes of the eyes, nose, and throat. If you feel irration in your lungs add Moniato help strenghten the lungs.




Fruit Juice

With so many berries in season right now you can make this wonderful juice.

1 cup washed fresh berries (blackberries, strawberries, raspberries, etc)

1 cup sugar or honey

1 gallon of water

Add berries and sugar to a blender. Fill the blender with water. Run the blender on high until the berries are all mixed up. Add mixture to a gallon pitcher and top off with ice and water. This is an extreamly refreshing drink and does not have all the unwanted additives.
