Training Center in Albuquerque
We are very excited to announce that we will be opening a training center in Albuquerque. We should be ready to have classes by mid June. We will have classes on health, herbs, diet, cooking and many other topics. Watch healthandweightlossclinic.com for more information.
What Excitotoxins do to you
Excitotoxins are food additives that are added to our food to enhance flavor, give a uniform taste and color. However did you know what excitotoxins do to you?
- Rob you of the ability to feel full although you have eaten.
- Over stimulate the pancreatic production of insulin that turns the sugar in the blood stream to fat and stores it on your body.
- Cause exhaustion shortly after you have eaten.
- Cause you to crave food.
- Over stimulate the nerves, then kills it (the black widow of food additives).
If you have more body fat than you think you should, you need to wrap your head around this fact: YOU ARE A VICTIM. The makers of all the food products use these food additives and many others that I have not yet talked about to do only one thing: get your money. Through advertising and political lobbies, they make “bad” look good and legal. That doesn’t make it moral. Again, we cannot change them but we can use the information in the WoW plan to free ourselves from their influence in our lives forever.
To see what excitotoxins are in our food see this article.
Spotlight on: Travl
TRAVL can be used as a catalyst. Let’s say, for instance, that you are taking an herbal formula and you want it to work a little bit faster, or a little better; take one capsule of TRAVL with the formula. One is sufficient as a catalyst. If you are taking a handful of herbs, add some TRAVL. It increases the absorption, and gets the herbs into the system much faster. (WARNING this will have the same effect on pharmaceuticals in that it will dump all the medicine in the pharmaceuticals at once and that is not good)
Traditional use of the contents: Ginger’s influence is slow starting, but has a high sustained level of action upon the circulatory system. Also used for nausea, cramps and dizziness. Cayenne positively influences the circulatory system, and helpful for dizziness, heart problems, and for both heat and cold tolerance. Peppermint Leaf has been used for pain, nerve disorders, headache and insomnia. Rosemary Leaf is used for circulatory problems, allergies, nervous allergies, and pain and digestive pain.
Recipe: Pumpkin Nut Chiffon
Dr James suggests that you get 3-5 tablespoons of coconut oil a day. Why not enjoy eating that coconut oil. This is one of our favorites way to add coconut oil to our diet:
1 cup Coconut Oil
1/3 cup Honey
1/3 cup Pumpkin
1 1/2 teaspoons Pumpkin Pie Spice
1/2 teaspoon Vanilla
1/2 cup Chopped nuts
Whip coconut oil with mixer until fluffy (2-3 minutes). Add honey, pumpkin, spice, and vanilla; continue whipping until well combined, approx. 1 minute; scrape sides as necessary. Add nuts, mix to combine. I use mini silicone baking cups but mini muffin tins work great or just spread on baking sheet and freeze 20 minutes. Cut into 1 inch squares.

Which Herbal Teas are good to drink during the WoW Cleanse?
We get this question asked often so I thought I would give some things to look for:
First off the most common name of excitotoxins in herbal teas is "Natural Flavors." Natural Flavors are chemicals added to food to give it a uniform taste or to mimic the taste of other foods. In herbal teas it is most often used to give the fruit flavors, so almost any fruit flavored herbal tea has natural flavors on the ingredient list. In fact I have yet to find a fruit flavored tea that does not have it.
So when looking for herbal teas check your labels, most often the single herbal teas are good, teas like peppermint, spearmint, chamomile, licorice root, roasted chicory are all good. There are also some blends that we quite like. From Celestial Seasonings, you might want to try Roastaroma, Mint Magic, Sleepytime (only the original doesn't have excitotoxins so check your label). Several of the Yogi Teas are also good. We also like some of the Stash Teas.
One of the benefits of herbal teas are that there are some that get your metabolism moving, so they are great in the morning, others calm the body and are great just before bed. We would love to hear from you which teas you like best.

Spotlight on Hay Asz:
Feburary is the month that allergies begin. That is due to spring coming and so many pollens are starting to come out as well as everyone trying to get over the flu or cold. Here is some information on Hay Asz:
In the past, HAY ASZ was known mainly for its hay fever relief properties. Now, I tell people to take it for colds, sore throat, runny nose, cough, congestion, asthma, flu, etc. Think of this formula not as a treatment for specific illnesses, but rather as a nutrient or a tonic to strengthen the entire respiratory system. HAY ASZ is good for any and all respiratory disorders.
Traditional use of the contents: Hyssop Leaf: has been used to relieve sinus congestion and sore throat. Comfrey Leaf has been used to soothe the sinuses and help relieve congestion. Marshmallow Root: has been used to soothe the mucous membranes in the sinus and the lungs. Elder Flowers, Elecampane Root and Fenugreek Seed has been helpful in relieving sinus congestion, sore throat, headache and watery eyes. Nettle Leaf and Juniper has been used to help relieve allergies. Oregano and Paprika, which is a natural decongestant.
Recipe: Chocolate Pecan Freezer Fudge
2 cups coconut oil
1 cup cocoa powder
2/3 cup honey
1 1/2 cups pecans chopped
Whip coconut oil with mixer until fluffy (2-3 minutes). Add cocoa powder and honey, continue to whip until combined well, approx. 1 minute, scrape sides if necessary. Add pecans, mix to combine. I use mini silicone baking cups but mini muffin tins work great or just spoon onto a baking sheet like no bake cookies.

Continuing our series on good fats and oils, this month we tell you how to choose good oils:
Fats and oils are very important to health but only unrefined, extra virgin, unrefined virgin, unrefined cold pressed or unrefined expeller pressed oils. NO canola or supermarket oils. Fats and oils are not the enemy and are essential (coconut is one of the best).
Fats & Oils
Unrefined is the first thing to look for. If not on the bottleSTOP. You don’t want it.
LOOK FOR – Unrefined: this is el primo. When it is on the bottle continue to look for:
Extra Virgin - an excellent choice. Generally the fullest flavor and aroma and the best quality. Or
Virgin - a very good choice still very aromatic and flavorful. Or
Cold Pressed - good quality and good to cook with. Or
Expeller Pressed - decent quality and ok to cook with.
Oils to avoid have the words:
Refined - very bad, even though the label may say extra virgin, virgin, cold pressed or expeller processed.
Pure - very bad even though the label may say extra virgin, virgin, cold pressed or expeller processed.
Polyunsaturated - stay away from these oils, they are very bad not because they are polyunsaturated but that is all they are.
Vegetable oil - a term that allows almost any chemical they want to use including solvents and deodorizers.
Shortening - most generally made of rancid oils. Nickel is used in process of hydrogenation.
Margarine – the melting point is well above normal body temperature and cannot be used in the body.
Hydrogenated oil or partially hydrogenated - most generally made of rancid oils. Nickel is used in processing of hydrogenation.
Canola oil – whether found in a health food store or not is a genetically created (GMO) plant from the rape seed which is very toxic to humans. NO canola or supermarket oils.
Vitamin D helps the body absorb minerals, strengthens cells bones and teeth, and strengthens the immune system and fight diseases. Vitamin D has also been shown to help the body keep fat from building up.
A lack of D vitamin makes us susceptible to flu and other illness. In the US each year 1 million people get the flu and of these half are hospitalized and of those 1,000 die from the flu, the other 34,000 deaths reported as the flu upon closer examination of records are pneumonia not flu. Proponents of the flu shot will admit it will not help pneumonia.
The flu shot is not the answer even if there were proof that it was effective and there is none. These shots put in to the body a toxic dose of mercury established by the CDC (25 mcg for a person weighing under 350 lbs.), also aluminum, and Ethylene glycol (Antifreeze), and last years Flu virus. What an adverting campaign. If it is last years Flu, whether you got it or not, you probably have antibody’s to defeat it unless you’re overwhelmed by all the other toxins in this shot.
To prepare for the flu season get plenty of good sunshine and boost your immune system with C-Plexand Fection. If you already have the flu and want help try:
Red chili is in season here in New Mexico. This sauce will give a wonderful addition to your meals. We even use it as a salad dressing, good tasting and no excitotoxins
10 pods Red chili
3 cups Water
1 tablespoon Coconut oil
1/4 cup Flour, sprouted
1 teaspoon Salt, sea
1/2 teaspoon Oregano
2 cloves Garlic, fresh, minced
- Roast the chilies in an oven at 200 degrees F for 5 to 10 minutes. Stir frequently so they do not burn. Remove the seeds and stems.
- Put chilies and water into medium pan. Simmer for 15 minutes.
- Put 1/2 the chilies with some of the cooking water into a blender. Purée and then strain. Discard the peels and seeds. Repeat with the other 1/2 of the chilies.
- Heat oil in medium saucepan. Add sprouted flour and brown for 1 minute.
- Add strained chili, the remaining cooking water and one additional cup of water.
- Add, salt, oregano and garlic. Simmer for 15 minutes.
Or a quick sauce, use frozen red chili purée instead of soaked dried chilies. Defrost the frozen chili and follow steps 4 through 6. For enchilada sauce some like to add tomato juice for a more mild flavor.

Spotlight on: Low Sugar
I often tell people that when the blood sugar level is low, your actions and emotions should lead you to be classified as “legally, temporarily insane.” Of course, after making such a preposterous statement, I chuckle. Let me explain.
In order to help those who suffer from hypoglycemia and other blood sugar related illnesses, we must understand that the bodies own mechanisms kick in when the blood sugar level drops. Its only goal is to elevate glucose levels in the blood stream. It doesn’t care how. The body doesn’t think, “I should eat this because it’s better for me,” it only wants to get the glucose level up right now.
Those who suffer from these blood sugar-related problems will recognize these familiar symptoms: the ache in the stomach; the quivery feelings; having the emotions so close to the surface, that panic happens very easily.
To give control to hypoglycemics, I suggest that they take this herbal formula daily. Once they have made good and intelligent decisions long enough to have changed their diet, it no longer affects their lives. Hypoglycemia is basically non-existent in a culture that has a good diet. Let me give you something to consider. Food is never advertised on TV. One more time so you can hear this, and say this sentence out loud as you read it… Food is never advertised on TV, or for that matter radio, and very seldom-printed material. Only “food products” are advertised. If we’re going to take back our lives, we must eat the best food we can get, not “food products.” Take back your life. Try LOW SUGAR; it has worked for many others and me.
Traditional use of the contents: Licorice Root has been used as a stimulant to the adrenal gland, and in maintaining blood sugars in hypoglycemia. Kelp has been shown to have beneficial effects upon the thyroid and parathyroid, and contains vitamins C, E and the B complex, along with magnesium and potassium. Siberian Ginseng (Eleuthero root) has been used to help keep blood sugar normal. Thyme and Chamomile have been used as stimulants to the thymus. Garlic has been used as a stimulant to the pituitary.
Recipe: Honey sweetened chocolate syrup
My wife recently found the benefits of Raw milk (an internet search on the topic is a true eye opener) Well she can’t get the stuff past her nose, much less drink it. Her secret, chocolate milk. But there are lots of issues mixing milk with sugar so she found this recipe and now she can get her milk.
1/2 C. water
2 t. vanilla
1/8 t. salt
1 C. natural cocoa powder
1 1/8 C. honey
Add water, vanilla, and salt to a 2 quart saucepan. mix well. Add the cocoa powder (this can go everywhere so go slow) mix together then add the honey.
Put the pan on medium heat and heat just to a boil. Let the syrup cool and keep in a mason jar in the fridge. Use like you would any other chocolate syrup.
This is an excellent substitute and then you don’t need to worry about all those additives.

Avocados
This is the third article in our series of good fats and oils. We have talked about coconut oil, butter and now avocado.
First off lets address the concern that avocados are high in fat. Yes avocados do have a high fat content (85% of the calories come from fat.) However the fat that is in avocados is essential to good health. The fat in avocados not only have been shown to help prevent heart disease and cancer, avocados also contain many essential nutrients and helps with the absorption of fat soluble vitamins and nutrients. Studies of people who eat avocados have shown that even though they have a diet that is higher in fat from the avocados the people in the study did not any more body fat in fact in some cases it was lower, yet all of the people that had avocado in their diet had a better concentration of vitamins E and K, and better absorption of potassium and magnesium. So even though there is fat in avocados it is very beneficial in fact essential.
One key group of nutrients in the avocado is the carotenoids. Carotenoids are a group of antioxidants that help repair cell damage, clean the body of toxins, and improve eye health. Carotenoids also help with skin health and elasticity. Avocados are also high in the vitamins A,B,C,E, and K, as well as phosphorus, magnesium, potassium, copper and iron.
As a part of the WoW plan adding avocado to your diet will give many added health benefits. We suggest adding avocado to your salads, and as a garnish to many meals.
Spotlight on Bladney
BLADNEY gets it’s name from both bladder and kidney. When people experience swelling, puffiness, lower back pain or painful urination, they need fluid removed from their system. BLADNEY is not primarily a diuretic. It is a formula that supplies the urinary tract with what it needs to function properly.
BLADNEY puts into the system what it needs in order to be healthy, so that the normal body function returns and the kidney and bladder do their jobs. In order for the body to deal with swollen tissues properly, it is necessary to continually drink water to keep the body from hoarding the fluid in it’s tissues. Water, coupled with the BLADNEY formula, helps to normalize the body’s sodium and potassium levels. BLADNEY helps keep the potassium in the system, unlike many chemical diuretics that chase it right out.
Recipe: Ways to use avocado
1. One of my favorite ways to eat avocado is to spread the avocado on toast and lightly sprinkle with sea salt. If you have never had it that way I strongly suggest it.
2. As a salad dressing:
one avocado
olive oil
salt
pepper
garlic
onion powder
Green Chili (optional, but we love it)
Mash the avocado and add the spices to taste. Add olive oil to a creamy texture. Mix in with your salad. This salad dressing will make the nutrients in your salad much more absorbable and easy to digest.

Is Butter Bad?
For many years now we have been told that there are better “food product” alternatives to butter. Well I thought I would take a stand for butter. Butter has been used for thousands of years and is a staple in many places throughout the world.
Butter is mostly butterfat but also has water and milk solids which are high in phosphorus, protein, and calcium as well as vitamins A, D, and E. Because butter is a “food” not a “food product” there are not any of the nasty trans-fatty acids (which the butter alternatives have lots of). Most butters are inspected and graded for quality whereas margarine is a “food product” so it is not inspected.
One thing to remember about fats (like butter) is how the body processes the fat. The trans-fatty acids in processed fats (like margarine) melt at above 118º F so in the body trans-fatty acids stay solid and the body treats it like a toxin. When the body can’t process toxins like trans-fatty acids the body wraps the toxin in fat and dumps it in places like the belly, thighs, hips. making us gain weight. Butter is totally different the fats and oils in butter actually feed and fuel the liver and by extension our bodies.
Now I am not saying go grab a stick of butter and eat it straight. But when you want to flavor your food or need the fats and oils in your recipes choose butter over the “food product” alternatives.
Spotlight on: I Brite
It is really exciting to have an herbal formula like I BRITE. I have had people come to the clinic who are slowly losing their vision. Being able to help reverse that process is really exciting for me… and also for them!
If there are eye problems, the diet must be addressed. Refined carbohydrates are to be avoided. A beneficial diet for eye problems consists of dark, leafy green and yellow vegetables, as well as grains and fruits.
Traditional use of the contents: Eyebright has been used for eye problems, including allergies and glaucoma. Fenugreek has been used to reduce the mucus in the eyes and the body. Bayberry Bark has been used to soothe the mucous membranes, and to soothe congestion of the eyes and the sinus. Dandelion Root has been helpful in liver cleansing, glaucoma and other eye problems. Goldenseal Root has been used as a tonic for the liver and the eyes. Oregon Grape Root has been used as a pro-biotic. It has a positive influence on the glandular and lymphatic systems, and the skin, also to stimulate saliva and bile secretions, thus reducing the eyes’ toxic load.
Recipe: Butter Mushrooms
Ingredients
- 3-4 Mushrooms (Cleaned and Sliced)
- 1-2 tablespoon Butter (Melted in a skillet)
- Sea salt and Pepper
Directions
Step 1
Put mushrooms in a buttered skillet. Don't crowd the slices they will cook better.
Step 2
Let cook until golden and then flip over to cook the other side.
Step 3
Usually a few minutes per side is good but don't rush them or turn the heat up, they won't be near so good.
Step 4

Coconut Oil
Spotlight on Healthy Cell
Recipe: Cabbage Carrot Slaw
Coconut OIl
There are a few products that we recommend everyone use when they come to the clinic. Just by making these few changes it can dramatically change a person’s health. These changes are minerals, vitamins and change their oil to coconut oil. We wanted to explain why it is so important to change your oil to coconut oil.
Fats and oils are the fuels of the liver, just like when you use bad gas in your car it can cause problems throughout your car, bad fats and oils can cause problems throughout your body. Virgin Raw coconut oil like Tropical Traditions Gold Label coconut oil in a persons diet has been shown to:
- improve the absorption of nutrients
- boosts energy
- normalizes body weight
- helps with digestive disorders
- reduces candida
- builds up the immune system
- strengthens the liver
- cleans out the arteries
- cleans out the bowels
- helps with normal bowel function
- normalizes the bodies use of sugar (diabetes and hypoglycemia)
- Clears up skin conditions
- plus many other benefits
As you can see by this list just changing your oil to coconut oil can dramatically change your overall health and we all want to be healthy. We suggest getting at least 3 tablespoons of extra virgin coconut oil each day. We know that it will help with your health.
Spotlight on: Healthy Cell
Have you heard about these green super food powders on the market today? There are several available on the market. We had thought that we could just pull one off the shelf and use it. We should know better by now shouldn’t we. As we looked at the products we saw many ingredients that we did not like such as caffeine, sugar, and excitotoxins. We tried some and we called them all pond scum, they were nasty! So we knew we could make the same thing but be in control of what went into the powder and control the taste. That is how Healthy Cell was born.
Healthy Cell is a powder that we have been using in the clinic for several years now. It gets its name from the fact that it helps feed our cells to make them healthy. We use it to help clients alkalinize their body, lose weight, build muscles, clean out toxins, normalize body functions and increase energy. People who use the Healthy Cell have said the change in their health has been amazing.
To use mix 1 scoop (one tablespoon) in 8 ounces of water. Taken 2-3 times daily.
Recipe: Cabbage Carrot Slaw
This recipe comes from our WoW diet program. This 60 day program helps detoxify, lose weight and have much better health and attitudes. In the clinic the program costs nearly $2000. We are working on making the program available for just the cost of the supplements around $500-$600. The program will be available this month.
1 1/2 cups cabbage, chopped fine
1 1/2 cups carrots, grated fine
1/2 cup onions, chopped fine
1/2 cup celery, chopped fine
1 tablespoon lemon juice
1 teaspoon Italian seasoning
1/2 teaspoon sea salt
I use my food processor with the chopping blade to chop my vegetables. I cut the cabbage into 2 inch pieces and then pulse till all big pieces are chopped, same with the celery and onion. Mix everything together and chill for an hour.

Food Combining
If you could lose weight, feel better and get rid of a host of diseases just by changing what you eat would you do it? What if you did not have to change what you eat but how you combine your foods? Would you do it?
That is exactly what food combining is: you eat the same foods you have always eaten just combine them properly. Many people have reported that just by combining their foods properly they have felt better, no longer have indigestion, gas, food allergies, and many other problems related to digestion. Lots of people say they have lost weight just by combing their foods properly.
There are three main food types, concentrated proteins, concentrated starches, and neutral foods. This chart shows which foods go into which category. Basically to food combine never mix the concentrated proteins and the concentrated starches. You can mix foods from the neutral category with the other categories. It is that simple. Give it a try after a few days of food combining you will notice a huge difference.

This article explains how she uses each of the products in her Drug Free Medicine Chest.
Recipe: Canned Beans and Rice
Many people ask us about having “instant food” with out all the added extra additives. We suggest that you can your own instant foods. So that you know exactly what is in your food.
Here in New Mexico, beans and rice are a staple of everyday life. Here is how to can your own beans and rice so that you too can have instant food when the need arises.
Canned Beans
For each quart jar:
1 cup dried beans
1 teaspoon salt
Water
Sort, clean and rinse the beans (we prefer pinto beans but this will work with other types of beans). Put the beans into a clean quart mason type jar. Add the salt. Fill the jar to one inch from the top with water. If you want some more flavor add one teaspoon of coconut oil and 2 cloves of garlic. Put on a new flat and screw the ring onto your jar.
Set up your pressure canner according to the directions. Can the jars at 15 pounds of pressure for 90 minutes.
Canned Rice
For each quart jar:
3/4 cup rice
1 Tablespoon Taco seasoning
Water
Rinse the rice. Put rice , taco seasoning into clean canning jars. Add water up to one inch from the top of the jar. If you like a more salted flavor add 1 teaspoon of salt. Put new flats on the jars and screw the rings on.
Set up your canner according to the directions on your pressure canner and pressure can at 15 pounds of pressure for 90 minutes.
Now you will have instant beans and rice in your pantry whenever you need it.
