Dense Cabbage Carrot Slaw
(measure vegetables after chopped)
2 cups cabbage, chopped fine (1/2 lb.)
2 cups carrots, peeled, chopped fine (1/2 lb.)
3/4 cup onions, skinned, chopped fine (1/4 lb.)
3/4 cup celery, chopped fine (1/4 lb.)
1/2 tablespoon lemon juice, fresh or bottled organic
1/2 teaspoon Italian seasoning
1/2 teaspoon sea salt
Use a food processor with the chopping blade to
chop vegetables, cut them into 2 inch pieces and
then pulse till all big pieces are chopped. Mix
everything together and chill for an hour.
1 cup slaw = 1/2 lb.
