Notes from Veronica:

                A vegetable salad can be any assortment of any kind or variety of vegetables. The vegetables can be diced. shredded, left whole, sliced & etc…  They can be mixed in a bowl, layered in a dish so you see all the colors, arranged pretty on a plate & etc…   All the vegetables can be raw or part of them cooked. You may top your salad with vinegar and oil or diced salted cucumbers and tomatoes  marinated in their own juices or some hot or cold soup like tomato basil, any variety will do, great if it’s homemade (always excitotoxin free). We love to top our salads with green chili sauce. Avoid boring salads it can be hard to choke them down. As a child I remember that a salad was Iceberg lettuce cut up and miracle whip and ketchup mixed for a dressing, that was

it! Not very colorful or inviting, just food.  Some people don’t like their food mixed up and something gooey on top. Recently at a new restaurant we tried I ordered a side salad and this is what I was served—arranged on a plate so I could see some of everything their were slices of avocado, tomatoes, cucumber, purple onions, red, yellow and orange peppers, fresh mushroom slices served with a small variety of greens, dressing served in a dish on the side. It was very appealing, I enjoyed the flavor of each vegetable, I didn’t even use dressing. Please take the opportunity to make your food look interesting and palatable. Salads should be desirable and flavorful.

 

                Once while in Old Mexico I had the opportunity to feed 10 doctors a raw diet for 10 days, WoW was that fun. I had not prepared for such a treat, I had supplies to prepare food for Michael (my husband) and myself so my appliances were small and scarce but I had a good knife. I was introduced to a wonderful fruit & vegetable market & I found a store where I was able to buy a few spices & vinegar and oil, so I knew I would be OK. I don’t speak spanish & I only had american money so I trusted the cashiers to be honest. I shopped daily. The average cost was $5.00 per doctor per day. Fresh Fruit & fruit juices till noon, Salads for lunch and supper, fresh carrot juice available any time. Here is a list of the vegetables I used; avocado, cabbage, broccoli, cauliflower, carrots, tomatoes, habanero chilies, onions, celery, spinach, romain, cilantro and beets. Spices I used; Onion & garlic granules, oregano, sea salt, plus balsamic vinegar, olive oil, & coconut aminos. I would shred the cabbage, grate the carrots, cut the celery, cauliflower & broccoli, slice the tomatoes & onions, tear the spinach & romain & toss that in a large bowl or make an arrangement of sorts. I dressed the salad with olive oil, balsamic vinegar, oregano, coconut aminos & granulated garlic & onion either mixed into the salad or served as a dressing. I then made guacamole with 9 very large avocados, some diced tomato & onion then spiced it with sea salt or coconut aminos & granulated onion & garlic. I then made pica de gallo using jabanero chilies, onion, tomatoes & cilentro & some sea salt. I used these same ingredients every meal
I just cut & arranged them differently. We had burritoes one night using
romain leaves as the tortilla. WoW what a hit, everyone was pleased and chose
to eat raw rather then find a restaurant for some it was their first experience
eating raw and didn’t think they could do without their bread and meat, they
learned they could and didn’t suffer at all. Eating the WOW plan will WoW you
and your health, you will be set free from the bondage of excitotoxins, dyes
& etc…  and regain control over
your appetite and food choices, you will find your strengths.
