Dense Vegetable Salad (everything is cut fine)

 

1/2 cup greens, cut small

2 tablespoons broccoli, cut very fine, peel & grate the stem

2 tablespoons cauliflower, cut very fine, peel & grate the stem

2 tablespoons tomatoes, dice small

2 tablespoons sprouts, cut 1 inch long

2 tablespoons cucumber, dice small

1 tablespoon balsamic vinegar

2 tablespoons olive oil

1/8 teaspoon garlic, granulated

1/8 teaspoon onion, granulated

pinch of salt, sea

pinch of 1 of these spices (basil, oregano, dill, savory, tarragon, marjoram) get to know these spices, one at a time.

Mix all vegetables in bowl. Add vinegar, oil & spices. Toss well enough to blend the flavors.

This salad should be about 1 cup the perfect amount for a portion of raw vegetables in the neutral salad. This is great tossed with the 1 cup of dense cabbage carrot slaw, topped with 1 cup of cooked vegetables cold or hot. Finish with 1 tablespoon to 1 cup of one of the soups or sauces & you have made a neutral salad. The final food you need to complete your meal is 1 cup of delicious cooked vegetables (baked, broiled, grilled, steamed, fried or sautéed)
