Split Pea Soup
soak split peas overnight
1/2 cup fat, butter, coconut oil or olive oil
3/4 cup carrots, sliced thin
3/4 cup celery, sliced thin
1 cup onion, chopped
2 cloves garlic, minced
5 cups water or blend 1/2 cup raw cashews with 2 cups of the
water for a nice flavor
1 cup split peas, soaked overnight
1 teaspoon Basil
1 teaspoon oregano
1 teaspoon parsley
1 teaspoon granulated garlic
1 teaspoon granulated onion
3 teaspoons sea salt

Sauté carrots, celery, onions and garlic in 1/2 the fat. Add
water, split peas and spices. Bring to a boil, reduce heat, cover
and simmer for 1 1/2 hours stirring often. For a creamier soup
blend the soup in a blender. Adjust seasonings to taste. This
soup freezes well. Don’t forget to label and date your
containers.
